Algunos exempleados aseguran haber recibido <strong>pu\u00f1etazos en el pecho o golpes durante el servicio<\/strong>, situaciones que, seg\u00fan relatan, formaban parte de una cultura de presi\u00f3n dentro del restaurante.<\/p>\n\n\n\n<p>Muchas de estas historias fueron compartidas masivamente en redes sociales, alcanzando <strong>millones de visualizaciones<\/strong> y provocando un intenso debate sobre las condiciones laborales en la alta cocina.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>Investigaciones y testimonios que intensificaron la pol\u00e9mica<\/strong><\/h2>\n\n\n\n<p>La pol\u00e9mica creci\u00f3 a\u00fan m\u00e1s cuando el <strong>New York Times<\/strong> public\u00f3 una investigaci\u00f3n basada en <strong>testimonios de 35 trabajadores<\/strong>, en la que se describen presuntas pr\u00e1cticas de disciplina extrema dentro del restaurante.<\/p>\n\n\n\n<p>Seg\u00fan los relatos recogidos, varios de los trabajadores eran <strong>estudiantes en pr\u00e1cticas que no recib\u00edan remuneraci\u00f3n<\/strong>, lo que ha reavivado el debate sobre el modelo laboral dentro de los restaurantes de alta gama.<\/p>\n\n\n\n<p>Algunos testimonios describen experiencias traum\u00e1ticas que afectaron su bienestar emocional e incluso los llevaron a <strong>abandonar sus carreras dentro de la gastronom\u00eda<\/strong>.<\/p>\n\n\n\n<p>Uno de los casos m\u00e1s comentados es el de un chef que trabaj\u00f3 en el restaurante en 2012 y relat\u00f3 que, cuando ocurr\u00eda un error en la cocina, <strong>todo el equipo pod\u00eda recibir castigos f\u00edsicos<\/strong>, una pr\u00e1ctica que, seg\u00fan afirma, era utilizada para imponer disciplina.<\/p>\n\n\n\n<p>Otro testimonio menciona que una empleada perdi\u00f3 <strong>18 kilos durante su primer a\u00f1o de trabajo<\/strong> debido a las largas jornadas laborales y la falta de tiempo para comer adecuadamente. Seg\u00fan su relato, en una ocasi\u00f3n fue golpeada en las costillas despu\u00e9s de usar su tel\u00e9fono m\u00f3vil para bajar el volumen de la m\u00fasica a petici\u00f3n de un cliente.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>La respuesta del restaurante y de Ren\u00e9 Redzepi<\/strong><\/h2>\n\n\n\n<p>Ante la creciente pol\u00e9mica, el restaurante public\u00f3 un comunicado en redes sociales en el que asegur\u00f3 que <strong>las historias que circulan en l\u00ednea no reflejan el ambiente laboral actual del establecimiento<\/strong>. Seg\u00fan el comunicado, muchas de las acusaciones se refieren a situaciones del pasado y la organizaci\u00f3n afirma haber realizado <strong>cambios internos y auditor\u00edas laborales<\/strong> para mejorar las condiciones de trabajo.<\/p>\n\n\n\n<p>Por su parte, el chef <strong>Ren\u00e9 Redzepi<\/strong> tambi\u00e9n emiti\u00f3 una declaraci\u00f3n p\u00fablica en la que reconoci\u00f3 que parte de los relatos reflejan comportamientos de su pasado.
